A Vegan Love Affair

Who ever said vegan/vegetarian food is boring hasn't visited my kitchen! I'm a newly turned vegetarian venturing on vegan lover. I cut out all meats, practically all things dairy except milk (I'm in love with my cappuccinos and not all places serve milk substitutes) and anything else that is derived from animals. I also found so many delicious substitutes to satisfy my hungry and constantly grumbling tummy.

So I present to you my favourite vegan sandwich for now, which has been making an appearance practically every other day, my oh so i-rye-sistible hummus sandwich




Ingredients:
Serves 1

- 2 slices whole rye bread 
     I use the make Quickbury, that's made in Germany and has literally none of those nasty preservatives or added sugar! 
- 1/2 avocado
- hummus 
     recipe below
- baby spinach
- cherry tomatoes
- turmeric
- salt and pepper to taste

Hummus Ingredients:

- 1 can of chickpeas
- 1 crushed garlics
- cumin
     I substituted tajini for cumin and loved it
- olive oil
- salt and pepper to taste

Steps:

In a food processor add all the ingredients for the hummus and blend until a nice creamy, smooth texture forms. Add some olive oil and a little bit of water if it's still lumpy or not as smooth as you want it to be.

Once that is done cut up the avocado into nice smooth slices and cherry tomatoes and toast the rye bread until crunchy on both sides.


When everything is chopped and toasted, add in a good amount of hummus onto one of the rye breads. Then place the baby spinach, avocado and cherry tomatoes. Finally sprinkle on some turmeric (add's an extra delicious and healthy kick), salt and pepper and finally put a little bit of hummus on the other rye bread (just a dap) and close your sandwich. 

There you have it, your delicious, healthy and vegan oh so i-rye-sistible hummus sandwich, packed with countless nutrients that makes you feel full instantly so you know you won't be creeping into you fridge every few seconds in the hopes of something new appearing.

Coachella: Best Looks that Coach us to Look Ooh La La


Please don't get me started; I'd sooo rather be at Coachella right now! The sunny weather, tanned skin, easy-breezy way-of-life, and flowers in my hair, lots and lots of them. Instead of yearning and daydreaming of the day I get to experience this hippie-inspired festival, I get to drool over all best looks which paraded through the crowd at Coachella instead.

So consequently, I present to you my favourite styles at Coachella 2014.

I thought Kendall Jenner, Selena Gomez and Paris Hilton looked easy-breezy-beautiful, adopting the statement jewellery and patterned-flowery clothing of a true hippie wonderfully:

Chanel Iman and Julianne Hough emphasised on an elegant and classic look yet still focusing on the hippie themed style perfectly. They both looked drop-dead gorgeous:

Someone I refuse to be humble about, my hunky husband Jared Leto never letting me down and showing me the reasons why I did (will) marry him:

Even though all these looks are effortlessly beautiful, none of them beats the queen of Coachella, the one-and-only, my favourite celebrity hippie, Vanessa Hudgens. She is undoubtedly the first person I look up when Coachella is on, because even when her look is bad, it's good:

Breakfast Blues

My favourite meal of the day; Breakfast. The breaking of the fast, without it I'm miserable, literally! I 'splurge' on my breakfast, as I believe in the age old saying that breakfast is the most important meal of the day! I truly push on the fact that it is, by all means, a necessity to have one moment of absolute solitude and tranquility before you head on off to your busy day! And what better way to accomplish that than by spending a few minutes in the morning with a hot date, breakfast.

"But I'm too busy for breakfast!" If Audrey Hepburn has time to get dolled up and venture down to Tiffany and Co. to eat her breakfast then you inevitably have time to get out of bed and into your kitchen! Wake up that half an hour early, prepare it the night before and refrigerate it, sleep earlier, do anything that could give you that bit more time in the morning. We take it for granted, breakfast is there we just have to grab it! So eat, it's simple and easy, eat, eat and eat some more. Then let the day come at you like a gale force wind, but you'll be prepared since you're tummy is full and you're mind is nourished.

One of my top breakfast meals is white scrambled eggs with smoked salmon and spinach on top of granary toast! A breakfast filled with delicious protein and iron. I also include a green tea and carrot juice. Carrot juice has many benefits but one of the most important is the vital antioxidant called beta carotene; It helps the skin, is a rich source of vitamin A and fights of certain cancers! Hello healthy breakfast at its best. 


If you're looking for something a little more sweet than savoury in the morning then why not opt for another one of my favourites: brown toast with honey and blueberries! Honey is the healthy type of sugar and it has been said that one must eat a cup of blueberries a day, as they are full of antioxidants. Two birds one stone? It's messy, fun and extremely tasty!
